FANtastic Friday: Being Lazy



Ok, so, this is a bit of a cop-off post, but its my last off day and I really just want to sit on my rear in my recliner and watch TV. 


Even as I am typing this, with my laptop on my lap, a re-run of The Big Theory (that I've seen too many time to count) on TV, my desktop fan blowing in my face (my hot flashes are acting up), my peace sign candle warming some Sweet Pea, slowing rocking myself to sleep in my recliner......   I am the definition of lazy. 


So...  to all a good day....  I am getting back to being lazy....

Recipe: Sour Cream Pound Cake

This is a favorite at my house.

Sour Cream Pound Cake

Ingredients

2 stick butter; at room temp (do not substitute)
6 eggs, room temp
8oz sour cream, room temp
3 cups sugar
3 cups flour
¼ teaspoon baking soda
1 ½ teaspoons vanilla
½ teaspoon almond extract

Directions

Preheat Oven to 350.
Grease and flour a Bundt pan.
Use the second rack from the bottom in your oven.
In a mixer, cream the butter and sugar together. Add the eggs in one at a time, beating well after each addition. Fold the baking soda into the sour cream. Add flour and sour cream mixing well.  Add vanilla and almond extract. Mix well. Pour into pan and bake for 1 hour and 15 minutes, or until toothpick inserted in center tests done. Cool in pan 10 minutes, invert onto rack to cool completely.

Recipe: Cheese Zucchini Soup

I am not sure where this came from orginally.  My husband came home from work one day with this recipe and all of the ingredients to make it.  It's really good and different.  The

Worcestershire sauce gives it a little kick.

Cheese Zucchini Soup

Ingredients                                                Soup Base
4 Slices Bacon                                           ¼ Cup Butter
½ cup onion, finely chopped                     ¼ cup all-purpose flour
2 ½ cups zucchini cut in ¼ inches slices   1 teaspoon salt
1 cup water                                                ¼ teaspoon pepper
½ teaspoon salt                                          2 ½ cups milk
                                                                   ½ teaspoon Worcestershire Sauce
                                                                   1 cup (4 oz.) shredded mild cheese
Directions
Cook bacon until crisp
Set aside for garnish
Sauté onion in bacon fat until tender
Add zucchini, water and salt.
Cover; bring to a boil
Reduce heat; simmer for 5 minutes until zucchini is tender. Set aside
Prepare soup base by melting butter in 3-QT saucepan, Blend in flour, salt, and pepper
Remove from heat, stir in milk and Worcestershire sauce
Heat to a boiling, stirring constantly, Boil for 1 minute, stirring constantly
Remove from heat, stir in cheese
Add vegetables with liquid to soup base
Heat to serving temp.
Garnish with crumbled bacon.
Yield about 6 cups.
