Cheese Zucchini Soup
Ingredients Soup Base
4 Slices Bacon ¼ Cup Butter
½ cup onion, finely chopped ¼ cup all-purpose
flour
2 ½ cups zucchini cut in ¼ inches slices 1 teaspoon salt
1 cup water ¼ teaspoon
pepper
½ teaspoon salt 2
½ cups milk
½
teaspoon Worcestershire Sauce
1
cup (4 oz.) shredded mild cheese
Directions
Cook bacon until crisp
Set aside for garnish
Sauté onion in bacon fat until tender
Add zucchini, water and salt.
Cover; bring to a boil
Reduce heat; simmer for 5 minutes until zucchini is tender. Set
aside
Prepare soup base by melting butter in 3-QT saucepan, Blend
in flour, salt, and pepper
Remove from heat, stir in milk and Worcestershire sauce
Heat to a boiling, stirring constantly, Boil for 1 minute,
stirring constantly
Remove from heat, stir in cheese
Add vegetables with liquid to soup base
Heat to serving temp.
Garnish with crumbled bacon.
Yield about 6 cups.
